Banana Cake

Yesterday was our son in law Scott's birthday. We had dinner at our place on Sunday to celebrate. First we had a baked dinner and then a banana cake for dessert. As the cake was passed to Mark a little hand shot out as quick as can be and took that piece of cake and had it up to his mouth before we could blink...






The banana cake is one of our family favourites. Rhonnie and Scott even asked me to make it for their engagement cake a few years back. I always have a few frozen bananas stashed in the freezer in readiness.

Banana Cake Recipe:

250 g. butter
3 cups self raising flour
1 tsp. Bicarb soda dissolved in 1 cup milk
11/2 cups sugar
3 eggs
3 large bananas mashed.

Method;

Cream butter and sugar
Add beaten eggs and mashed bananas
Mix alternatively flour and milk
Pour into a 9in, deep sided cake tin, greased and lined and bake in a mod. oven for 1 hour. Cool and ice with lemon icing or chocolate for a change.

  4. Love banana cake, and usually always have frozen bananas as well. I'll give your recipe a whirl this week.

  5. He might like to try banana muesli bars then. Mash 2 bananas, add a cup of oats, a cup of seeds/fruit/nuts, a drizzle of honey, a sprinkle of cinnamon, and spread out flat in a tray and bake.
