Many thanks to all who commented on my vegan dilemma with your recipes and suggestions. They have come in very handy. As it has turned out our WWOOFers are not strict vegans and do eat honey which makes things a little easier and cheaper as we have plenty of honey. They eat very simply and don't require excess alternatives and really all that I have had to buy is some extra coconut milk for their morning porridge as we have ours with milk. And they are good cooks and I have relinquished hold on my kitchen and enlisted their help with food preparation, something I find a little difficult as many WWOOFer's want me to buy extra ingredients but these 2 are happy to use what is available.In fact I have learnt a great deal and stretched myself a bit in my need for control over many things on the farm since they've arrived. Fantastic Kate! It sounds as though everything worked out well. What a fabulous experience having them stay. One day when I get busier outside on the property I will enlist the help of some wwoofers. It would be fun.

Yes, I am missing Kate's posts too, Linda. Though Spring is a busy time in the garden...perhaps she is out planting in that lovely garden .
